With a commitment to showcasing the diversity and richness of halal cuisine, the awards bring attention to establishments that excel in providing memorable dining experiences.

Now back to the story behind the successes of Mr. Biryani.

 

Early Beginnings

Govind's culinary journey began out of necessity. Coming from a large family with nine siblings, he started working at a young age to support himself. His first job in the food industry was as a pizza delivery boy when he was 19 years old. This job, taken up for pocket money, became the foundation of his passion for the food and beverage (F&B) industry.

"I started my career in F&B after my A-levels. I started as a pizza delivery boy just to support myself because we are a big family, nine siblings. I had to work to support myself," Govind recalled.

 

The Transition to Culinary Arts

While working as a pizza delivery boy, Govind developed a liking for the F&B industry. Encouraged by his manager to go full-time, he quit his studies and dedicated himself to his job. His career progressed as he took on roles in various prestigious hotels in Singapore, gaining invaluable experience in high-profile events and management.

"It's not that I chose to work, I had no choice. But I liked it. My manager told me, 'Why don't you become full-time on board?' So I decided to quit studying and join full-time," Govind explained.

 

The Birth of Mr. Biryani

Govind's journey towards establishing Mr. Biryani wasn't straightforward. After several business attempts, he finally started a small catering company. However, it wasn't until he sold this business and took a year off to refine his culinary skills that the idea of Mr. Biryani took shape. Starting with a humble food stall selling prata and a unique kofta biryani, Govind's business quickly gained popularity.

"I put up a stall, selling prata and other items. Being an F&B guy, my mind was always thinking about doing something new. I started with kofta biryani, and it picked up very quickly. Within two months, it made me super busy," Govind shared.

 

Establishing the Restaurant

The success of the food stall led to the opening of Mr. Biryani's first outlet at Norris Road. Despite initial skepticism from others about the location, the restaurant flourished. Within months, it became a busy establishment, and even during the pandemic, Mr. Biryani thrived through its delivery services.

"A lot of people asked me, 'Are you crazy opening a restaurant here? You will not make it.' But I said, 'We have a plan, we know what we are doing.' Surprisingly, one month later, the restaurant business picked up. Within six months, we were already a seasoned, busy restaurant," Govind recounted.

 

The Unique Appeal of Hyderabadi Dum Biryani

Govind's specialty is the Hyderabadi dum biryani, a dish distinct from other biryanis commonly found in Singapore. Unlike the traditional method involving frying onions and tomatoes, Hyderabadi dum biryani uses a marination process without frying. The meat is marinated with spices, ginger, garlic paste, and yogurt, and the rice is parboiled and layered with spices, ghee, and herbs before being cooked with a high and low fire technique.

"Hyderabadi dum biryani is very different from all the biryani we have in Singapore. There's no frying process. The meat is marinated with spices, ginger, garlic paste, and yogurt. The rice is parboiled and layered with garam masala, coriander leaves, mint leaves, and roasted onions. Then we seal the pot and cook it with a high and low fire technique," Govind explained.

 

Sourcing Authentic Ingredients

One of the key factors that sets Mr. Biryani apart is the quality of its ingredients. Govind ensures that critical spices and chili powders are sourced directly from India, specifically Hyderabad, to maintain the authentic taste of his biryani. Unlike commercially blended spices, Mr. Biryani uses single-origin spices to preserve their natural flavors.

"A lot of people think that everybody uses the same spices, but the whole food industry involves a lot of processes. Most spices in the market are already processed. We get some key ingredients directly from India, ensuring they are not processed before use. This makes a difference in the flavor," Govind emphasized.

 

The Story Behind the Name

The name "Mr. Biryani" emerged from the need to brand the restaurant. Initially, Govind's face was the brand, but as the business grew, a formal name was needed. After considering various options and consulting friends, "Mr. Biryani" was chosen, a name that resonated well with customers.

"We needed to create a brand. Last time, there was no brand, only my face. So we thought of names and sent a list to our contacts. Everyone selected 'Mr. Biryani.' That's how the name came about," Govind said.

The design of Mr. Biryani's restaurants reflects Govind's background in high-end F&B services. The interior is kept simple, clean, and bright, with white walls and a few prominent decorations like a mural of the Taj Mahal, symbolizing the Mughal Empire's influence on biryani. Govind also emphasizes the importance of regular maintenance to keep the restaurant looking new and inviting.

"For the design, there was no concept initially. We didn't use any designer. I wanted the walls to be plain light color, mainly white. The Taj Mahal mural represents the history of Biryani, starting with the Mughal Empire. We maintain the restaurant regularly, repainting and touching up to keep it looking new," Govind shared.

 

Passion for Food & Community

Govind's passion for food extends beyond biryani. He enjoys sharing his knowledge and motivating others in the culinary field. He actively encourages young people in Singapore to explore careers in the F&B industry, recognizing the need for local talent in this sector.

"I enjoy talking to people, sharing my knowledge, and motivating others. I encourage young people to get into the F&B business. We really need young talent in this industry," Govind expressed.
