The Penang Culture x Datuk (Dr) Chef Wan Signatures features 5 dishes that are personally curated by the celebrity chef himself! "I have worked closely with Penang Culture's chefs to create this menu and am confident that they are able to execute them to perfect Malaysian taste." said Datuk Chef Wan. If you're wondering what the dishes look like or of course, how it tastes like, hop on the ferry cos' we're going to Penang!
First up is the Mackerel in Spicy and Sour gravy or also known as Gerang Asam, an iconic Peranakan dish. It's a fish curry that marries a unique blend of spices with kaffir lime leaves, lemongrass, and laksa leaves. Cooked to perfection with the dried shrimp base. The ingredients give away the fact that the Gerang Asam is unlike any other form of fish curry that we are used to eating here in Singapore. The gravy is pleasantly light with some hints of tanginess that is just right.
Personally, Gerang Asam reminded me of Asam Pedas, another form of fish curry. I mean it in a good way, as the light and slightly less thick gravy makes it a perfectly great gravy to sip away during the meal, just like how you would do with some Tom Yum.
Here's a tip: Be sure to try out the Mackerel in Spicy and Sour gravy [Gerang Asam] with Mum's Fried Rice [Nasi Goreng Emak], the next item on the menu!

Datuk (Dr) Chef Wan probably thought to himself "Just like mum used to make 'em" when he came up with this dish. The Mum's Fried Rice or Nasi Goreng Emak may look like any other fried rice that you can find elsewhere but, this humble and comforting fried rice proved to be the perfect accompaniment to the other 4 dishes because of how well it balances and complements the other 4 dishes beautifully.
The rice is filled with anchovies, eggs, and kang kong all on one plate. Whether you choose to eat it on its own or mix it with the other dishes, the Mum's Fried Rice is a really great addition to the menu.

One word, Rendang. What could be better than that? Marrying it with the King Tiger Prawns that are freshly shipped from Malaysia for the King Tiger Prawn Rendang, that's what! Averaging at 60 grams per prawn, these juicy King Tiger Prawns are paired with the rich flavourful taste of Rendang that we all know and love.
Cooked over medium heat until the turmeric and coconut milk transforms into a fragrant dry stock that emphasizes the sweetness of the King Tiger Prawns. Beef lovers don't be disappointed, if you're looking for beef you can look forward to the Massaman Beef [Daging Massaman], another item on the menu!
Interesting Fact: They make an opening on the prawns so it's really easy for you to enjoy them!

Don't forget your greens! The Stir Fried 4-in-1 Vegetables with Sambal or Sambal Goreng Empat Sayur, is a melody of flavors (and crunchiness) with a mix of long beans, petai beans, eggplant, and ladies fingers. A representation of the love for Ulams or vegetables in Malaysia.
The quartet is dressed up with the sambal made with a generous amount of chilies, dried shrimp paste, shallots, and dried prawns that makes the dish pleasantly fragrant.

Last but not least on the menu is the Massaman Beef or also known as Daging Massaman. A traditional Thai beef curry but with Datuk (Dr) Chef Wan's twist! The beef used in this dish is cooked to perfection - tender, and not dry at all. The beef is simmered with an array of spices like coriander, fennel, cinnamon, and star anise. "Rich" is the perfect word to describe this dish!
You may be asking how is this different from the other Massaman Beef curries out there, well Datuk (Dr) Chef Wan adds in a dash of evaporated milk and peanuts which really adds to the richness that really makes this dish the one to try! Personally, it was my favorite item on the menu. The added milk and peanuts made an already great dish even better, in my honest opinion.
