Collaborating with Ginger at PARKROYAL on Beach Road, Chef Wan will be presenting a special showcase of four dishes, along with his grandmother's Kerabu Mee Hoon Nyonya, adding a personal touch to the culinary journey. This marks Chef Wan's first return to Singapore in five years and offers a rare chance to savor royal recipes not commonly available in the Lion City. Chef Wan will also be hosting a live cooking demonstration on 12 March 2023, where he'll be sharing his cooking secrets and engaging with his fans.

Hailing from the Northern state of Kelantan, this dish starts with a spiced gravy made with coconut milk, red chilies, shallots, garlic, ginger, turmeric, candlenut, and Fenugreek seeds. After simmering the chicken in the marinade for 30 minutes, it's oven-grilled to perfection with a smoky char and juicy interior thanks to frequent basting. Finally, the chicken is returned to the thick gravy to simmer and soak up even more flavor. On the plate, it requires little else than turmeric leaves as garnishing and welcomes all to dig right in. This dish is a must-try for anyone looking to spice up their dinner routine!
Get ready to indulge in the rich and savory flavors of Rendang Udang Galah Perak, a mouth-watering dish from the heart of Peninsular in Perak! This dish features king prawns cooked to perfection with a blend of shallots, ginger, lemongrass, turmeric leaves, dried chili, and condensed coconut milk. Once the ingredients are brought to a boil, the heat is lowered to a simmer, and the prawns are left to bubble away in the flavorful gravy until it thickens to perfection. To finish it off, the dish is served piping hot with a garnish of finely sliced turmeric leaves. We think this goes well with the sambal belacan readily available at the restaurant there. Then, the mutton and tomato puree are added and cooked over low heat until the mixture reduces to perfection. A bit of yogurt is stirred in for a touch of sweetness and sourness before it's scooped into hearty bowls for serving.
